Sharpening – Important Tips
Tiny metal residue may leave black marks on your cutting board after sharpening.  *Wooden boards are especially prone to staining.

To prevent this:

  • If sharpening on a wooden board, place a cloth directly on the cutting board to avoid scratches and marks.
  • Rinse and dry the blade thoroughly after sharpening.

Quick Maintenance

Surface Used: #1000 Medium Diamond Disc

How to Use:

  1. Attach your knife to the magnetic holder, ensuring the blade is flush with the table for stability.
  2. Roll the #1000 diamond disc back and forth along the edge about 5 to 10 times on each side. This will quickly realign the edge and restore its smooth cutting performance without the need for a full sharpening session.


Thoroughly Sharpen the Blade

Surface Used: #400 Coarse Diamond Disc & #1000 Medium Diamond Disc

How to Use:

  1. Attach your knife to the magnetic holder. Please make sure the knife is flush with the table.
  2. Roll the #400 diamond disc side of the sharpener back and forth, sharpening both sides of the knife about 20 times each to restore the edge.
  3. Roll the #1000 diamond disc side to refine the blade and remove burrs on both sides until your knives reach razor-sharp perfection.

Excellent knives I’m retired and enjoy cooking at home now. My knives are old and not sharp.I was watching a YouTube video and they were chopping some vegetables and they had your knife. I took a screenshot and ordered them online from Japan. The service was excellent. It was pretty fast and I do love the knives, beautiful handles and very sharp. The only issue I have is the additional duty fee.. I understand why we have to pay it. It just would have been easier if it was included in the original price I did not see that. DHL held up the order until I paid them and then it was done quickly online. Thank you.

I have wanted a genuine Damascus steel knife for as long as I can remember.

I have wanted a genuine Damascus steel knife for as long as I can remember. (now 73) I finally bit the bullet and purchased the Taski 7" Kiritsuke knife. What a beautiful knife it is, the presentation even prior to using it is fantastic. The beautiful hand hammered layer, the wonderful shaped wooden handle are real features. Once I used it for the first time, I was impressed with feel of the handle, not to mention the sharpness of the blade. It effortlessly cuts anything I have used it for so far. Why did I wait so long I ask myself.
